Fig & Brie Burgers with Kale Chips

Fig is a trendy ingredient right now and our chef captured the flavor in an unexpected way. This recipe is a hit with kids (believe it or not) and adults alike. Perfect for the grill this weekend.

Ingredients (Serves 4)
- Ground Beef (1lb)
- Buns (4)
- Brie Cheese (8oz)
- Fig Jam (4oz)
- Arugula (4oz)
- Dijon Mustard (2 tsp)
- Red Onion (1 whole)
- Balsamic Vinegar (1 tsp)
- Kale (8 ribs)
- Your beef favorite seasoning blend (1 tbsp)
- Kosher Salt
- Black Pepper
- Olive Oil
Preheat oven to 350 degrees.
1.Patty burgers, then season them well with salt and pepper. Wash your hands after handling raw beef.
2.Cut the brie cheese into slices.
3.Thinly slice the onions.
4.Heat a sauté pan over med-high heat.
5.Add a small amount of oil, then sauté the onions until translucent and lightly browned.
6.Add the balsamic vinegar and 2 tbsp. of water.
7.Reduce heat to avoid burning and continue cooking until the onions are caramelized (dark brown) and softened.
Prepare Kale Chips
1.Wash the kale and drain well, then pat dry with paper towels.
2.Remove the thick stem/ribs down the center of the leaves.
3.Tear the leaves into slightly-larger-than-average chip-size.
4.Place the leaves in a large bowl and drizzle with oil and the seasoning blend. Toss to coat.
5.Lay the kale pieces in single layer on a cookie sheet and bake in a 350 degree oven for 10-15 minutes, until the kale is browned at the edges and crispy.
6.Allow to cool.
Cook The Burgers
1.Heat a heavy skillet over med-high heat. When hot, add the burger patties and let them cook, undisturbed, for 3 minutes per side. Continue flipping until done.
2.Ensure doneness, then remove from heat and set aside.
- Assemble your burger. Spread fig jam and Dijon mustard on the buns, add the arugula, the burger patty, the caramelized onions, and the brie cheese.
- Serve with kale chips and enjoy!
